Don’t you worry.
I’m not going to brush off all the wonders of fall flavors by shoving spiced coffee in your face.
There’s some baked apple goodness coming your way in a couple of days, and I will shove that in your face, but this. . . .
This coffee thing just happened yesterday.
Coffee grounds and spices stirred together pre-percolation.
Half and Half poured into the carafe so it heats as the coffee brews, and that hot spicy drip dribbles right down into the warming cream.
There you have it.
Pumpkin pie spiced coffee that rivals Starbucks and Dunkin Donuts for a fraction of the price.
I may or may not have added a dollop of frozen Cool Whip.
Don’t judge.
And don’t even try to pretend you don’t have Cool Whip in your freezer.
I know you do.
And if you don’t, you should – precisely for situations just like these.
For coffee situations.
But really, coffee wasn’t even what I had originally intended to tell you about today, it just sort of happened.

Obviously, you are welcome to brew your coffee in whatever coffee/water proportion you please. This is just what I do and, if you like, you can use it as a guideline. This should make enough for 4-6 cups of coffee, depending on the size of your coffee cups.
Ingredients
- 36 oz water
- 6 tablespoons ground coffee
- 3/4 teaspoon pumpkin pie spice
- 1/2 cup half and half
- sugar to taste
- Cool Whip or Whipped Cream optional
Directions
Add coffee grounds and spice to coffee filter. Mix together. Before hitting the "brew" button, add Half and Half to the empty coffee carafe so it can warm as the coffee brews.
My own personal taste is for a ratio of 1 tablespoon of ground coffee per 6 oz. cup of coffee, and 1-2 tablespoons of Half and Half per 6 oz cup. Feel free to play with your own proportions.
When coffee is finished brewing, serve in individual cups topped with Cool Whip, if desired.
